The Thai Charcoal BBQ Stove. This is a traditional cooking Thai stove. It is great for B.B.Q. and perfect for wok cooking. The top socket of the Thai BBQ Stove is designed to be removable. There are several reasons for that: one is to increase air or oxygen inside the stove, while the wok or pot is set on top of the stove. The open socket also allows you to add or realign the charcoal to spread the heat without lifting the wok or pot.
In Thai kitchen, we use stick charcoal not briquettes as in the USA. Some people put the socket in place if they want steady heat (mostly medium to low) for a certain period of time. But for high heat, they usually leave the socket open so they can add more fuel during cooking. The stove itself is made from clay and surrounded with cement and wrapped with sheet metal. Since this product is handmade by local Thais, in some stoves the socket might be lightly cemented to the body of the stove.
